We use a horizontal press with a lateral membrane filled with water. Its weight gently pushes on the harvested grapes to gradually extract the juice.
We induce both the alcoholic and the malolactic fermentations, beneficial to the aromatic development of our wines. Since the beginning of the 2000s, we have added 50 228-liter Burgundy barrels to our vat room. We vinify the juice from “Les Belles Voyes” terroir and store the reserve wines used to make our liqueur de tirage and dosage liqueur in these barrels.
